Cookbook Project: Making progress

I’ve slowed down a bit on this project, mostly because I’ve found recipes in other books or on the internet that I’ve wanted to make instead! But I’ve still used a few of my cookbooks recently:

#1. Pure and Beautiful Vegan Cooking

This book was a Christmas present with so many good-looking recipes in it! The chai spiced muffins had to be the first recipe I tried, though.

Once I saw how much crystalized ginger was in this recipe, I knew I was going to like it.

The verdict: These were so delicious! I’ll absolutely be making them again.

#2. ATK’s DIY Cookbook

I’ve had this book for a while - my friend worked on it and sent me a copy. I love the idea of it and have made a few of the recipes in the past, but mostly the baking ones.

#3. Whole Food Cooking Every Day (again!)

The cookbook I started it all off with! Since I got this right before I decided to cook through all my cookbooks, I felt like I needed to use it at least twice (and there were plenty of recipes in there that I wanted to make, so doing two wasn’t going to be difficult!)

I went with the root vegetable soup this time, full of ginger and coriander. It’s so delicious! Perfectly spiced and so filling. I’ve had a few bummer recipes in the past, but I’m happy to say that this time, they were all successes!
