Cookbook Project: Short & sweet!

I’ve been busy since the last time I checked in on this project - turns out that I’ve managed to cook from five different cookbooks in that time! In chronological order, I’ve used:

#1. Plenty

I made the two-potato vindaloo from Ottolenghi’s Plenty, which was another hit for me from an Ottolenghi book. The recipe starts with a bunch of different spices, which is what initially caught my eye. The result was a super flavorful dish with tons of leftovers!

#2. Molly on the Range

I love this cookbook so much. I love the way it’s written and laid out and I love the tone of voice that Molly Yeh uses in it.

There’s a delicious hazelnut chocolate cake in the book that happens to be vegan, so I have made that recipe a lot since buying this book for myself. This time, I went with the “Party Trick Peanut Butter Cake”

#3. My Portugal

My partner, Jonathan, and I were planning to take a belated honeymoon trip to Portugal this past spring, but the pandemic obviously changed that plan. So while our honeymoon is postponed, I thought it’d be fun to make some Portuguese food to enjoy in the meantime.

When I was flipping through this book, however, I found a skillet cornbread recipe instead and changed my plan pretty quickly!

This cornbread is more savory than what I’m used to, but still delicious! It also featured the last of the thyme I was able to harvest from our yard before the surprise snowstorm we got in Seattle!

#4. Moosewood Restaurant: Cooking for Health

This is one of the cookbooks on my shelf that I think about a lot but rarely cook from for some reason? But the fact that the miso tofu I made disappeared before I remembered to take a picture of it seems like a good indicator that I ought to pull this one off the shelf more frequently!

#5. The Natural Witch’s Cookbook

My friend Devon gave me this cookbook for Christmas last year and while it’s a little more spiritual than I am usually drawn towards, it also has some really interesting looking recipes! Valentine’s Day felt like a good day to make the chocolate pear cloud cake recipe.

The result. This cake  is SO rich. It is delicious, but the recipe mentions that it’s as good for breakfast as it is for dessert, which is almost impressive to me!
